Lemony Asparagus Red Risotto

A delicious comforting dish. Red rice has a wonderful nutty flavour and makes a healthier option to white refined rice. You could also use quinoa or a mixture of buckwheat and quinoa. Red Rice is rich in anthocyanins, antioxidants that can help protect the body’s cells from damage. It also contains plenty of soluble fibre making it useful for stabling blood sugar.

(serves 2)

 Ingredients:
1 tbsp olive oil
1 red onion, finely chopped
2 garlic cloves, crushed
125g Camargue red rice
1 tbsp butter
500ml hot vegetable stock
Zest of 1 lemon
1 tbsp lemon juice
150g frozen peas
200g asparagus, cut into 2cm pieces
2 tbsp grated parmesan cheese

Method:
Heat the oil in a large shallow pan and sauté the onion and garlic for 5 minutes.

Add the rice and stir to coat in the butter, then add the vegetable stock.

Bring to the boil then simmer covered for 40 minutes, stirring occasionally.  Add the lemon,  peas and asparagus and cook for a further 3-4 minutes until tender.

Spoon into bowls and scatter over the parmesan to serve.
