Lemon Harissa Turkey Leaf Wraps

Lettuce leaves are ideal for making low-carb wraps and keeping this dish light and energising. Serve these little wraps with dipping sauce or gluten-free soy sauce.

(serves 4)

Ingredients: 
1 tbsp coconut oil
400g turkey mince
1 preserved lemon rind only, finely chopped
2 tsp harissa paste
1 tsp ground cumin
Sea salt and black pepper to taste

Ingredients for dipping sauce:
2 tbsp Chinese rice vinegar
2 tsp maple syrup or honey
Splash of fish sauce
Squeeze of lime juice
¼ tsp grated fresh root ginger

Ingredients to serve:
Little gem lettuce leaves
½ ripe avocado, peeled and chopped
8 cherry tomatoes, halved or quartered

Method:
Heat the coconut oil in a frying pan and add the turkey mince. Break it up with a spoon and add the remaining ingredients to the pan. Stir and cook for 8-10 minutes until the turkey is cooked through. Allow the mixture to cool. Stir in chopped avocado and cherry tomatoes.

Mix together the ingredients for the dipping sauce and adjust the sweetener to taste.

Separate the lettuce leaves and fill the leaves with the turkey mince. Drizzle over the sauce to serve.
